Easy Healthy Chicken And Vegetables Soup Recipe

Ingredients and steps:

1 chicken breast
2 cups water
1 tsp salt
1 tsp black pepper
1 tbsp ginger garlic paste
Pressure cook for 12 minutes
Once done, shred the chicken
Pass the soup through a sieve.
5 green onions
1 green pepper/capsicum
1 red pepper/capsicum
4 chestnut mushrooms
1 carrot
Use any vegetables you have if you cannot find these.
Stir fry 1 tbsp minced garlic in 2 tbsp oil
Add all chopped vegetables
Add shredded chicken.
Stir fry for 2-3 minutes
Add 1 tsp white pepper
1 tsp black pepper
1 tsp paprika
2 tbsp white vinegar
2 tbsp dark soy sauce
2 tbsp siracha or any hot sauce
1 tsp salt or to taste
Stir fry for 2-3 minutes.
Add the chicken stock
Add 1 cup water
1 small can of sweetcorn
Cook this for 5 minutes Once the soup is ready
Mix 2 tbsp cornflour in water. Add it to the soup and cook for 5 minutes. Whisk 2 eggs and add it to the soup. Gently mix the eggs to make ribbons. Serve the soup with garlic bread and drizzle some chilli oil if you like.
I also squeeze lemon juice on it before eating
